The classic summer combination of strawberries and goat cheese comes alive in this quick and easy meal prep lunch! I like to bulk up this strawberry salad by adding green lentils and walnuts, then tossing it in a tangy Dijon mustard vinaigrette!

How to make a Strawberry & Goat Cheese Salad:
Top a bed of leafy greens with green lentils, sliced strawberries, crumbled goat cheese and crunchy walnuts.
Add olive oil, balsamic vinegar, Dijon, thyme, oregano, salt and pepper to a small mason jar and shake until emulsified.
Drizzle salad with dressing just before eating and enjoy!



Tips for making the best Goat Cheese Salad:
- Use fresh ingredients and buy local! Grab some greens from your local farmer’s market. Stop by the strawberry stand on the corner and pick up a bucket. The fresher your ingredients, the tastier your salad will be. Plus, buying local means you’re supporting your community and the hard working farmers that live there!
- Feel free to add grilled or leftover rotisserie chicken to this meal if you’d like! This recipe is a great blue print to use up ingredients you’ve got left in your fridge! Dried cranberries or white beans would taste great in this salad. Feel free to switch out the walnuts for cashews, almonds or pecans too!

- 2 cups spring greens
- 1/4 cup cooked green lentils
- 1/2 cup sliced strawberries
- 1 oz. goat cheese, crumbled
- 1/4 cup chopped toasted walnuts
Dressing:
Instructions
- Place greens into your meal prep container or on a plate.
- Add lentils, strawberries, goat cheese and walnuts.
- Add all dressing ingredients to a small mason jar and shake until emulsified.
- Drizzle with dressing just before eating and enjoy!
