Dried Cherry Salad

This dried cherry salad is loaded with crumbled Gorgonzola, crunchy pecans and thinly sliced red onions, tossed in a classic balsamic vinaigrette for a simple yet satisfying mid-day meal!

How to make a dried cherry Gorgonzola salad:

You’ll start by topping your bed of spring greens with nutty cooked quinoa. Then add thinly sliced red onion, toasted pecans and dried cherries. Finally add a handful of tangy crumbled Gorgonzola.

In a small mason jar combine olive oil, balsamic vinegar, Dijon, oregano, thyme and a large pinch of salt and pepper. Shake until emulsified.

Drizzle salad with dressing just before eating and enjoy!

Tips for making the best dried cherry and pecan salad:

  • Use fresh ingredients and buy local when possible. Grab some greens from your local farmer’s market this Saturday. Fresh ingredients = more flavor. AND buying local means you’re supporting your community and the hard working farmers that live there!
  • Feel free to add leftover rotisserie chicken or grilled chicken to bulk up this salad. Or you can add any other odds and ends you might have hanging around your fridge waiting to be used up. This is good a blueprint recipe – feel free to customize it and make it your own!
  • Double, triple or even quadruple this recipe to feed a crowd! You can use the scale button on the recipe card to increase the serving size and ingredients of this recipe. You could also scale it up and make a week’s worth of healthy lunches if the meal prep mood strikes you!

  • 1/4 cup cooked quinoa
  • 1/4 cup dried cherries
  • 1/4 cup chopped toasted pecans
  • 1/4 cup crumbled Gorgonzola
  • 1/8 cup sliced red onion

Dressing:


Instructions
